PASTITSIO

Greek food spreads its culinary influence in many countries of the world including Europe. It is known as the best food in the world. With a centuries-old tradition, Greek cuisine has been influenced by oriental and western culture. Fresh vegetables, fish and seafood play a significant role in dishes especially because of the long coastline, while meat is not very popular, with the exception of lamb.


Now we begin our journey with a famous Greek dish: the Pastitsio.


Pastitsio


Pastitsio is a dish of baked pasta with minced meat and b�chamel sauce. You can enjoy this delicious food in every season. Food in Greece is served with a mixed green salad seasoned with wine vinegar and virgin olive oil.


INGREDIENTS:


2-1 / 2 cups uncooked penne pasta
2 tablespoons butter, melted
1 cup grated Parmesan cheese
1-1 / 2 pounds ground sirloin
1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup shredded Parmesan cheese, divided


BECHAMEL SAUCE:


1/2 cup butter, cubed
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups 2% milk
2 large eggs


INSTRUCTIONS:


Cook the pasta according to the directions on the package; drain.
Toss with butter; add the grated Parmesan.
Transfer to a greased pan.


Preheat the oven to 350 �.
In a large pan, cook meat and onion over medium heat for 8-10 minutes or until the meat is no longer pink, breaking the beef into pieces; drain.
Add the garlic; cook 2 minutes more.
Stir in tomato sauce, salt and cinnamon; heat through.
Sprinkle with grated Parmesan 1/2 cup.


Melt the butter in a large saucepan. Mix the flour, salt and pepper until smooth; gradually add milk. Bring to the boil; cook and mix 1-2 minutes or until thickened.


In a small bowl, whisk a small amount of warm mixture into the eggs; everything is back in the pan, constantly banging.
Bring to a gentle boil; cook and mix 2 minutes.
Pour over the beef mixture.
Sprinkle with remaining cheese.


Cook, covered, 20 minutes.
Cook, uncovered, 30-40 minutes longer or until browned.



Tips for the kitchen


Beat continuously when you add milk to the roux (flour and butter mixture). The whisk will help you break all the lumps of flour.
This recipe is perfect if you're having a large gathering or just want a lot of leftovers. But you can easily resize this recipe.
The addition of hot spices such as cinnamon, nutmeg and pimento is a distinctive feature of pastitsio.
