SAGANAKI FRIED CHEESE

Saganaki is a simple, delicious Greek recipe. There are many variations, but the simple version of the cheese is very popular.
The recipe takes its name from the pan in which it is made: the sagani is a two-handed pan made of various materials.

INGREDIENTS:
1 pound firm cheese - preferably graviera cheese
Water enough for 2/3 cup all-purpose flour
1 tablespoon olive oil
2 to 3 lemons quartered
INSTRUCTIONS:
- Cut the sliced cheese or 1/2-inch thick wedges from 2 1/2 to 3 inches wide. Each slice must be thick enough not to melt during cooking.
- Moisten each slice with cold water and dredge into the flour. Remove the excess flour.
- Heat about 1 tablespoon of oil over medium-high heat in a pan or heavy ground.
- Sear each slice of cheese in the heated oil until it is golden brown.
- Turn the slice over halfway to make both sides brown evenly.
- Serve hot with a last-minute lemon juice juice.
